
What’s Needed for the Skewers
To prepare eight delicious chicken skewers for the grill, you will need the following ingredients:
- Just over 2 pounds of chicken thighs cut into 1 or 1,5-inch pieces
- 1 teaspoon of cayenne pepper
- 1 teaspoon of ground cumin
- 2 teaspoons of smoked paprika
- 1 crushed garlic cloves
- 2 tablespoons of olive oil
- 2 limes cut in half
- 2 tablespoons of Sriracha
- A cup of thick Greek yogurt

Prep the Meat and Start the Grill
In a bowl, mix together the cayenne pepper, smoked paprika, cumin, garlic, and olive oil. Add the chicken to the bowl and turn until coated. Put the chicken pieces onto 8 skewers and chill them in the refrigerator for at least an hour before grilling to let the meat marinate. Heat up the barbecue and grill the chicken on high heat for about 4 minutes, making sure to turn them to cook each side. Place the limes cut-side-down on the grill and cook everything for another 4 minutes until both the chicken and limes look charred. Put them aside lightly covered with foil for 5 minutes.

Time for Black Bean Salsa
The black bean salsa requires:
- One 14-ounce can of black beans, rinsed
- 1 bunch of chopped coriander leaves
- 1 and a half cups of shredded kale
- 1 thinly sliced jalapeno
- 1 finely chopped red onion
- A quarter of a cup of extra virgin olive oil
Combine all these ingredients in a bowl, season to your liking, and drizzle the juice of one charred lime. Mix to combine. Serve the salsa and the skewers along with a bowl of Greek yogurt topped with a swirl of hot sauce and limes on the side!
